Veggie Korma (No Onion & Garlic)

An effortless Veggie Korma (without onion and garlic) can lift your mood from feeling blue to bright! This dish is full of powder packed, nutrient rich ingredients. Tastes best as a side dish with any Pulao/ steamed rice/ Chapati or Naan Bread. Give it a try!
For the vegan version of this recipe just remove Paneer & Ghee from the list of ingredients.
Ingredients:
- Carrot-1 cup (cubed)
- Green beans-1 cup (sliced )
- Capsicum-1/2 cup (sliced)
- Red bell pepper-1/2 cup (sliced)
- Potatoes- 1 cup (cubed)
- Paneer cubes-1 cup
- Raisins-2 tablespoon
- White oil-1 tablespoon
* Shallow fry the above ingredients in one tablespoon of white oil and keep aside.
- Soaked white poppy seeds- 3 teaspoon
- Soaked cashew/almonds- 8 to 10 pieces.
- Sesame seeds- 1 teaspoon
* Blend all the above 3 ingredients into a smooth paste.
For the Gravy:
- White oil- 2 Tablespoon
- Cumin seeds- 1/2 teaspoon
- Dry Red chilli- 2 pieces
- Cardamom pods- 3 to 4 (cracked)
- Cinnamon- 2 pieces
- Cloves- 6 to 8 pieces
- Bay leaves- 2
- Green chilli paste- 1 teaspoon
- Ginger paste- 2 teaspoon
- Coriander powder-1 teaspoon
- Cumin powder-1/2 teaspoon
- Water-1/2 cup
- Coconut Milk- 1 and 1/2 cup
- Garam masala powder-1/2 teaspoon
- Ghee-1 teaspoon.
- Salt- to taste.

Cooking Method:
- In a cooking pot, temper the mildly warm oil with dry red chillies, cumin seeds, cardamom, cinnamon, cloves & bay leaves.
- When they are fragrant, add the Ginger paste, green chilli paste. Cook for 1 minute. Add cumin powder, coriander powder, Add 1/2 cup water, cook in medium flame till the oil seeps out.
- Mix well and add blended white paste, fry for 2-3 minutes.
- Now add the veggies and mix well. Add the coconut milk. Cover the pot and let it simmer away till the veggies are fully cooked.
- Adjust the salt & thickness of the gravy.
- Finally add Ghee and Garam masala powder.
The Korma is ready!
