Veggie Korma (No Onion & Garlic)

An effortless Veggie Korma (without onion and garlic) can lift your mood from feeling blue to bright! This dish is full of powder packed, nutrient rich ingredients. Tastes best as a side dish with any Pulao/ steamed rice/ Chapati or Naan Bread. Give it a try!

For the vegan version of this recipe just remove Paneer & Ghee from the list of ingredients.

Ingredients:

  • Carrot-1 cup (cubed)
  • Green beans-1 cup (sliced )
  • Capsicum-1/2 cup (sliced)
  • Red bell pepper-1/2 cup (sliced)
  • Potatoes- 1 cup (cubed)
  • Paneer cubes-1 cup
  • Raisins-2 tablespoon
  • White oil-1 tablespoon

* Shallow fry the above ingredients in one tablespoon of white oil and keep aside.

  • Soaked white poppy seeds- 3 teaspoon
  • Soaked cashew/almonds- 8 to 10 pieces.
  • Sesame seeds- 1 teaspoon

* Blend all the above 3 ingredients into a smooth paste.

For the Gravy:

  • White oil- 2 Tablespoon
  • Cumin seeds- 1/2 teaspoon
  • Dry Red chilli- 2 pieces
  • Cardamom pods- 3 to 4 (cracked)
  • Cinnamon- 2 pieces
  • Cloves- 6 to 8 pieces
  • Bay leaves- 2
  • Green chilli paste- 1 teaspoon
  • Ginger paste- 2 teaspoon
  • Coriander powder-1 teaspoon
  • Cumin powder-1/2 teaspoon
  • Water-1/2 cup
  • Coconut Milk- 1 and 1/2 cup
  • Garam masala powder-1/2 teaspoon
  • Ghee-1 teaspoon.
  • Salt- to taste.

Cooking Method:

  1. In a cooking pot, temper the mildly warm oil with dry red chillies, cumin seeds, cardamom, cinnamon, cloves & bay leaves.
  2. When they are fragrant, add the Ginger paste, green chilli paste. Cook for 1 minute. Add cumin powder, coriander powder, Add 1/2 cup water, cook in medium flame till the oil seeps out.
  3. Mix well and add blended white paste, fry for 2-3 minutes.
  4. Now add the veggies and mix well. Add the coconut milk. Cover the pot and let it simmer away till the veggies are fully cooked.
  5. Adjust the salt & thickness of the gravy.
  6. Finally add Ghee and Garam masala powder.

The Korma is ready!
