Spinach & Parsley Rice
If green shows up on his plate in this form, he never says no, otherwise my husband is a meat lover. However, in search of some nutritious, healthy food and to satisfy my craving for rice I made this quick spinach & parsley rice in a pressure cooker.
As we know, both spinach and parsley have good amount of vitamins and other health benefits, I decided to share this with you all.
Ingredients:
- Spinach leaves-300gm (Blanch and blend into a smooth paste)
- Basmati Rice- 2 cups
- Boiling water- 3 cups
- White oil- 2 tablespoon
- Cloves- 4 to 6 pieces
- Cinnamon stick- 2 (broken pieces)
- Cardamom- 4 pods
- Onion-1 medium size (chopped)
- Tomato- 2 medium size (chopped)
- Garlic- 4 to 6 cloves (paste)
- Ginger-1 inch (paste)
- Green chilli- 2 to 4
- Coriander powder- 1 teaspoon
- Cumin powder-1/2 teaspoon
- Salt (to taste)
- Ghee-2 teaspoon
- Garam masala powder- 1/2 teaspoon
- Parsley/ Cilantro- (a handful).
Cooking Method:
- Wash and soak the rice for 30 minutes, then drain the water.
- Heat the pressure cooker, add white oil, temper with cloves, cardamom and cinnamon. After 5 seconds add the chopped onions and fry till fragrant.
- Make a paste of garlic, ginger, green chillies, cumin powder and coriander powder.
- Now add the paste and 2 tablespoons of spinach paste. Fry till the raw smell is gone. Now add tomatoes, salt.
- Fry for 5 minutes, add the remaining blended spinach.
- Now add the rice and mix well.
- Add hot water and let it come to boil. Add ghee and garam masala.
- Put on the lid, pressure cook it till the pressure rises to one whistle. Switch off the heat immediately and let it rest till the pressure is released.
- Garnish it with Parsley/ Cilantro. It gives a subtle freshness to this dish.
- Serve warm with any side dish & cucumber raita!
