Carrot pudding/ Gajar ka halwa
“Gajar ka halwa” is one of the most popular Indian desserts. At the same time it is unlike most Indian sweets which are primarily milk product based. In this case our humble carrots form the base of this dish while Cardamom, Nutmeg and Ghee impart the royal aroma that makes it so special. Even people who are not big fans of desserts prefer to make an exception for Gajar ka Halwa.
Ingredients:
- Carrot- 3 cups (Grated)
- Ghee- 2 tablespoon
- Half n Half/ Whole milk- 2 and 1/2 cups
- Condensed milk-1/2 cup
- Sugar- (your preference)
- Cardamom/ Elaichi powder-1/2 teaspoon
- Jaiphal/ Nutmeg powder-1/4 teaspoon
- Raisins & walnuts-1/4 cup (roast them in ghee beforehand)
Cooking Method:
- In a hot cooking pan add grated carrots, dry roast it until the moisture evaporates.
- Add 1 tablespoon of Ghee and saute for 2-3 minutes, then add half n half and keep cooking in medium heat until it becomes almost dry. It may take 15-20 minutes.
- Add condensed(sweetened) milk and mix well. You can use additional sugar to taste. Cook it for 5 minutes or till the whole mixture takes on a dough like consistency, releases a bit of oil and stops sticking on the pan.
- Finish with more Ghee, cardamom powder, nutmeg powder, raisins & nuts.
- Enjoy warm or cold!
