Avocado Toast
There is a love affair in the family.
Seriously. There is!
It’s Avocado. And possibly everyone is involved in the affair. My Brother-in-law, my mother-in-law and my husband, so much so that they are ready to have this every single morning. I believe avocado and eggs have an eternal bond, when prepared in any form, with any spice/ herb, together they taste wonderful. This is my usual lazy Sunday 5 mins breakfast .
When life gives you Avocado, what do you make? I always make an avocado toast. Trust me this is a very simple & healthy breakfast and doesn’t really need a recipe. I am sharing with you my favourite way of making this.
You will always find some eastern spices/flavors in my recipes, an expression of the kind of foods I grew up with. At the beginning these may seem counter intuitive, but I have tried and tested these amalgamations of eastern and western flavors. And the results are amazing. Try them and leave your comments on how you like your Avocados!
You will need:
- Avocado- 1 (medium)
- Salt and Pepper to taste
- Cumin powder- a pinch
- Garlic powder-1/4 of teaspoon
- Cilantro- 1 teaspoon (freshly chopped)
- Onion- 1 teaspoon (finely minced)
- Lime/Lemon juice- 1 teaspoon
- Chilli flakes- a pinch ( if you like it spicy)
- Eggs- Half boiled and peeled -2 (you can also use poached eggs/ scrambled eggs/ eggs with runny yolks/ Hard boiled eggs)
- Italian bread/ Any bread- 4 slices
And rustle it up!
- Chop finely/ semi-mash the Avocado then add (salt, pepper, garlic powder, cumin powder, fresh cilantro, onion & lime juice) and mix well.
- Toast the bread slices and spread the avocado evenly
- Top it with oval slices of half boiled eggs and season with salt pepper.
